Ingredients :
  • 2 Tbsp. olive oil
  • 1/2 white onion diced
  • Salt and pepper to taste
  • 1 lb. boneless skinless chicken breast trimmed and cut into bite-sized pieces
  • 1 tsp. garlic minced about 2 cloves
  • 1 cup uncooked extra long grain rice rinsed
  • 2.5 cups chicken broth
  • 2.5 cups broccoli florets cut into bite-sized pieces
  • 2 cups cheddar cheese shredded and divided

Instructions :
  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and sauté until softened.
  3. Turn up heat to medium-high, salt and pepper chicken, then add chicken to pan.
  4. Cook chicken until no longer pink inside, then add garlic. Cook for 1 minute.
  5. Add rice and chicken broth to the pan and bring to a boil. Reduce heat, cover, and let simmer for 12 minutes.
  6. Stir the broccoli into the rice mixture, cover, and let simmer for another 8 minutes, or until broccoli and rice are both tender.
  7. Add 1/2 cup cheese to the rice mixture and stir until melted.
  8. Sprinkle the remaining cheese over the dish and cover for 2-3 minutes, until cheese is fully melted.
