Pasta is one in every of my absolute favourite things to eat, and after I made this one, I knew I had to proportion.

It’s pretty a good deal making a quick white sauce, then mixing it with solar dried tomatoes which brings a burst a flavour! adding chilli flakes offers it some warmness, so you add up with a completely tasty creamy and highly spiced sun dried tomato sauce.

I used jarred sun dried tomatoes that still had herbs and garlic protected. I haven’t tried the use of solar dried tomatoes that aren’t in oil and with out the more flavourings yet so I’m uncertain if this will impact the flavour. if you deliver it a move, I would really like to recognise how it went within the feedback!

  • 250g uncooked penne pasta
  • 1 tbsp + half tsp greater virgin olive oil
  • four to 5 garlic gloves, minced (2 tbsp)
  • 1 1/2 tbsp cornflour*
  • 2 cups unsweetened almond milk
  • half of tsp salt + pepper to flavor
  • 1/2 + 1/4 cup solar dried tomatoes (jarred in oil, with garlic and herbs included), tired from any oil
  • 1 tbsp dietary yeast
  • 1 onion, diced
  • 1 tsp chilli flakes, or to flavor
  • half of tsp dried oregano
  • 2 to 3 big handfuls of rocket or infant spinach

  1. cook dinner your pasta in line with the package instructions, however depart the pasta just barely undercooked. Set apart.
  2. add 1 tbsp olive oil right into a big frying pan over medium to high warmness. while hot, add garlic and prepare dinner for 2 minutes or till gently browned. blend in cornflour and prepare dinner for a further minute. add half tsp of salt and 1 cup of almond milk, making sure that the combination is clean besides the garlic. while it has thickened, add the ultimate cup of almond milk. while it has thickened barely (it's going to thicken similarly while blended), pour this into a blender.
  3. add half of cup solar dried tomatoes, dietary yeast and 1/three cup water to the blender and mix until clean. Set aside.
  4. Rinse out the frying pan and warmth up half tsp of oil. reduce the final solar dried tomatoes to be roughly 2cm portions. add this at the side of the onion to the pan and sauté for 3 minutes. upload chilli flakes and dried oregano and prepare dinner for a further minute. If it sticks to the frying pan, add a dash of water.
  5. Pour the sauce into the pan, ensuring the warmth is low to medium to prevent it from sticking. whilst the sauce is heated via, add inside the pasta. add pepper to taste and any extra salt or a touch of water if wanted. whilst the pasta is heated through, serve this on top of the greens.
